Since we're not dead here, I want to share a recipe I just made yesterday. It's a really easy, flexible recipe so don't woryr if you use a little more or less of some of the ingredients (like broccoli, cheese and chicken).



1 lb chicken breast, cubed
3 cups frozen broccoli florets
1 can Cream of chicken or Mushroom
1 can of water
1 1/2 cups minute rice
1 cup shredded cheddar cheese

On medium-high in a large skillet, cook chicken for 3-4 minutes, or until browned on both sides. Add water, soup and broccoli; mix. Bring to a boil. Add rice and cheese, lower temperature to low and heat for 5 minutes, or until rice is tender and cheese is melted. (I find I use alot more cheese than 1 cup, but that's all the recipe calls for).

Serve! It's also good to have some ranch dressing for dipping and sauce.
